Memories of hot pot have always involved family and friends around one or two boiling pots of broth on hot plates, set upon the dining room table and enjoyed over conversation, often during the holidays such as Lunar New Year. Sometimes, it was simply the way my mom handled a meal when there were going to be a lot of people coming over for dinner. Raw cut meats, vegetables, bean thread noodles, and tofu were laid out on the table, waiting their turn to get dunked, cooked, then retrieved before being dipped into a personal bowl of XO sauce beat with a raw egg, and eaten.
Known as one of the only restaurants in Los Angeles that serves Piedmontese beef, Star King BBQ is an unlikely destination for the genetically advantageous, double-muscled, super lean meat. But the truth is that you’ll never find this Italian breed at any other Korean BBQ, and at less than a handful of other restaurants, such as in a burger at Stefan Richter’s L.A. Farm.
While I have had a lot of close calls, I recently came upon what I can honestly call “the best barbecue” I’ve had in my entire life. And I owe that honor to a summer-long residency by Adam Perry Lang, who currently lives (that’s what the Airstream is for), cooks and feeds serious barbecue seekers on the Jimmy Kimmel Live! backlot in Hollywood.
From now until September 5th, he’ll be serving up his pecan wood-smoked specialties every Tuesday, Wednesday and Thursday for lunch. Everything in this awesome ‘cue is made from scratch (okay, perhaps not the meats), from the charcoal in the Texas burn pit to his 2-ton, custom pit smoker – and even the cutlery, which he literally carves himself.
